
This recipe includes a perfect recipe for toast loaf. This sandwich can be served hot or cold. Top with any salad you like, but a mâche is pretty and very delicious.

12 g (0.42 oz) fresh yeast
250 ml (8.45 fl oz) beer
400 g (14.11 oz) wheat flour
4 g (0.14 oz) sugar
7 g (0.25 oz) salt
50 g (1.76 oz) butter, unsalted
Pickled gherkins
60 g (2.12 oz) sugar
30 g (1.06 oz) apple cider vinegar
25 g (0.88 oz) onions
3 g (0.11 oz) mustard seeds
3 g (0.11 oz) dill seeds
100 g (3.53 oz) gherkins

800 g (28.22 oz) minced beef
150 g (5.29 oz) onions
15 g (0.53 oz) salt
20 g (0.71 oz) butter
instructions
Toast loaf
Add the yeast to the cold beer and stir to dissolve it.
Add all the other Components and knead for 8 minutes.
Cover the bowl and let the dough rise for 1 hour.
Grease a loaf pan with soft butter.
Press and fold the dough gently and shape it into a log.
Put the dough into the loaf pan, cover and let it rise for 1 hour. Preheat an oven to 175° C (347 degrees Fahrenheit).
Bake the loaf for 20 minutes or until the bread has an inner temperature of 94° C (201.2 degrees Fahrenheit).
Let the loaf cool down before you slice it.
Pickled gherkins
Chop the onions very fine.
Boil the sugar, apple cider vinegar, onions and spices for 3 minutes. Let it cool down.
Rinse the gherkins and slice them 4 mm thin on a waffle blade.
Add the gherkins to the pickling liquid for at least 2 hours.
Beef patties
Chop the onions very fine.
Fry the onion in 20 g (0.71 oz) of the butter on medium heat until golden brown. Let the onions cool.
Mix the minced beef, salt and fried onions. Roll meat balls and press them gently.
Fry them in the butter. Start with high heat and when the patties are browned, turn the heat down to low and continue to fry them until they are cooked through.
Assembly
Cut the toast loaf lengthwise into 10 mm slices. Trim off the edges.
Cut the bread slices into 5 x 20 cm pieces.
Lightly butter the bread slices on top and bottom.
Place one slice of toast on the plate and add a couple of gherkins on top and then add some beef patties. Repeat for one more layer.
Cut the tomatoes into half circles and balance them on the top layer.
Rinse and dry the mâche salad and add it on the top.
